This was my favorite meal on my last hike. Very easy to make.

1 Package Zatarains Black Beans and Rice
1 Teaspoon turmeric
100 Gram Red Lentils
6 Slice pre-cooked bacon
4 Tablespoon mixed dehydrated soup vegetables
1 Teaspoon curry powder
Advance Preparation:
  • Pour the contents of the black beans and rice mix in a bowl.
  • Add enough lentils to the total weight is 300 grams.
  • Add the rest of the ingredients (except bacon) and toss to mix.
  • Divide the mix evenly between two zip bags.
  • Put three slices of bacon (cut into bite-sized pieces) into each bag.

In-Camp Cooking:
  • Put 2 cups of water and one bag of mix into your cooking pot.
  • Bring water to boil, stirring occasionally to keep food from scorching on the bottom of the pot.
  • Once it boils, remove the pot to a pot cozy for 15 minutes, or until it is done, or until you can't wait anymore.

  • The dehydrated soup veggies are from the Netherlands. I found them in a Dutch import store. They contain potato, leeks, parsnips, carrots, and onions. They are diced and sliced very small so they rehydrate fast. You can substitute or omit, as desired.
  • Lentils are a good source of potassium - a needed electrolyte when hiking. The red lentils are very small and cook faster than the more common brown lentils. Look for them in the Indian or Middle Eastern markets.
  • You can olive oil for a flavor and calorie boost as desired.
  • You can use other brands of Black Beans and Rice. Just add enough lentils to bring the total weight up 300 grams for two servings. I have also used basmati rice with (or instead of) the lentils. Basmati rice cooks fast in a pot cozy - no need to use instant rice. I find about 150 grams of dry food rehydrated with 2 cups of water is a good proportion and serving size.
  • The turmeric doesn't add a lot of flavor, but it has good anti-inflammatory and antioxidant properties. It will likely stain your clothes a bright yellow/orange color if you spill.
