I know Rasty knows far more than me about imparting flavor to bland trail food... but I do have 2 personal favorites that are outstanding ideas for backpackers...

My favorite pickles:
32 oz jar hamburger dills, drain and discard liquid
Sprinkle with 2 tablespoons of tobasco and one teaspoon red pepper flakes
Cover with four cups of sugar until sugar melts, stir now and then
Put back in jar and store in refrigerator.
It's like watching a caterpillar turn into a butterfly.

Desert Pepper Trading Company's Salsa Diablo has jalapenos, onions, garlic, lemon juice, cilantro, and other ingredients. The lemon juice makes it special, IMO. Some salsas have lime juice, but I am not a fan of limes.

this makes a great pickle for tuna salad or potato salad.
suggest saving the pickle juice and adding sliced red onions and allowing the mix to marinate,
Taco Bell provides great hot sauce packets. I always pick up a few spare packets when at TB.

I use them in tuna salad and it does make a difference. If you drain the dill pickles well you can use the juice for a second batch.
