I gather the traditional method is to ferment by burying the shark in the sand on the beach. Years ago my dad visited Iceland and was served harkarl. They said he was the first foreigner ever to ask for seconds. -
Speaking of fish, this is delicious but too heavy. I've only carried it on a day hike.
