You might want to talk with one of the outfitters in Moab to see if they can help you with logistics. It seems to be a popular biking trail, so you might be able to work out a deal with them and have them stash water for you. The info I gathered mentions meeting up with support vehicles, so you may be able to have the outfitter stash the water along the route if they're going to be out there shuttling riders anyway.
