These came out pretty good ...
Fruit, Seed, & Nut Power Bars
Ingredients:
1 cup whole raw almonds
1/2 cup dried apricots
1/2 cup dates
1/2 cup prunes
1/4 cup orange juice
1/8 teaspoon salt
1/4 cup raw pumpkin seeds
1/4 cup raw sunflower seeds
Preheat oven to 300°F. Line an 8x8-inch square pan with foil.
Place the almonds, apricots, dates, and prunes in a food processor; pulse a few times until coarsely chopped. Add orange juice and salt; pulse until mixture starts to stick together. Add pumpkin seeds and sunflower seeds, pulsing a few times just to incorporate.
Scoop mixture into prepared pan. Using a large square of wax paper or plastic wrap, evenly press mixture into pan, using your palms to flatten.
Bake 15 minutes. Remove from oven and cool completely.. Use ends of foil to lift bars from pan. Cut into 8 bars. Wrap each bar in plastic wrap and store in refrigerator.

These ain't pancakes. They're more like granola bars. Change the ingredients to yer heart's content:
Cranberry and Pecan Flapjacks
Ingredients:
¾ cup / 170g of butter
½ teaspoon of vanilla extract
½ cup / 100g soft brown sugar
2 ¾ cup / 225g cups of rolled oats
1 tablespoon of honey
½ cup / 50g cranberries, chopped
½ cup / 50g pecans, chopped
½ cup / 40g dessicated coconut
Method
Line a baking sheet (9 x 13 inches) with parchment paper. Preheat the oven to 350 F.
Place the butter, honey, vanilla extract and sugar together in a large saucepan and melt over a medium heat. Once the butter has melted, add the rolled oats, cranberries, pecans and coconut, and stir together.
Pour the mixture into the baking sheet. Bake for about 30 minutes, until golden/ lightly caramel in color. Remove the tin from the oven and leave aside to cool.
When the flapjacks are still slightly warm, divide them into squares, using a sharp knife. Then, once the flapjacks are fully cooled, cut the flapjack squares and remove from the tin and serve. These flapjacks will keep for a a few days, once kept in an air tight container.

These come out like Larabars. Raw ingredients, no cooking, just some quality time with a food processor. These kind of bars start with making a paste of dates and other fruits, then adding nuts, seeds and spices as desired. Maintain a ratio of 1/2 cup of fruits that go into the paste, to 1/3 cup of nuts, seeds and other dry ingredients, and it should come out fine. If too sticky, add more dry ingredients For variety consider using dried cranberries, dried blueberries, cashews, orange or lemon zest, coconut, various seeds ... a trip thru your local natural food store can be inspiring (if expensive ...)
Very Cherry Bars
Ingredients:
1/4 cup chopped dates (rough chop whole dates, don't use pre-chopped)
1/4 cup dried cherries
1/3 cup whole pecans, almonds or walnuts
1/8 tsp cinnamon
Place dates and cherries in food processor, pulse until processed to a paste,
Transfer paste to bowl (Don't bother cleaning processor bowl yet),
Place nuts in processor, and pulse till finely chopped,
Add chopped nuts and cinnamon to paste,
Use your fingers to knead ingredients together
Shape into bars, eat one, and wrap the rest in plastic wrap or waxed paper
I refrigerate em ...

No I am good - just not sure where to pick them up... I only have one all natural store in West Chester. Dessicated - means dried Coconut right?
Right. You can find it sweetened or unsweetened, and I'd say the choice is up to you, and how sweet you want the bars.-

Clif bars and my insides don't agree with each other. The Kind bars are too sugary, I'm diabetic. I'll have to come up with something... Publix carries ;dark chocolate medly' by Second Nature. Dark Chocolate, almonds, cashews, pecans.--

Sams club was selling a several pound Hershey bar a few weeks ago. I think it was about 3 pounds. Looked like it was about 6 inches wide and 8 inches long. I didn't pick it up as I figured I could drop it and break my toes.--

Not really power bars, but I'm partial to the Quaker Oats fruit filled oatmeal bars. I haven't been using the stove for breakfast recently. These have become part of my cold breakfast.

i keep a box of costco high protein low sugar bars around for when i want a "bar" rather than something natural. if i'm at home mid afternoon i'll have avocado toast more often that not. i always have "bars" in my pack; although mixed nuts or almonds are my usual trail snack.2,000 miler -

I've found some decent bars at LIDL, forget the name, but the ones with coconut in them are really tasty. Sorta like a mounds with lots of nuts and stuff."Dazed and Confused"
