heat Wok with 4 Tsp peanut oil
blitz cook in small batches to preserve oil temp 1lb. of G. Hog, cut into 1" pieces, (marinade it in fridge for ten min prior) in several Tsp of the stir-fry sauce.
then add florets of broccoli, " fresh peeled minced Ginger, 1/2" green Onion pieces cut on a bias (white end cuts only), 1 Tsp. minced Garlic, and stir-fry sauce and G Hog..Cook till sauce thickens, about three mins.
3/4 cup soy sauce
1 tsp. white rice wine vinegar
1 tsp. dark vinegar (or Balsamic)
1 1/2 Tsp. sesame oil
2 Tsp corn starch (premix w/ just enough water to incorporate)
garnish w/ fresh un-cooked green onion
Serve over rice. Bon Apatite George
For a hotter version consider adding 5-6 dried red chili peppers during frying process

Had a good one today. We hiked up to the overlook on the Pyramid Point Trail at Sleeping Bear Dunes National Lakeshore (only 0.6 miles from the parking lot). From the end of the trail you are a few hundred feet above Lake Michigan looking straight down the face of a dune into the lake. The Manitou Islands are off on the horizon. Then we heard a loud shrill chatter a saw a Bald Eagle soaring over the beach a couple of hundred below us. We have had quite a few eagle sightings recently but how often do you get to see one from above?
