Just when you thought you saw everything.
A week ago my wife over cooked some pork chops when the BBQ Grill ran out of gas. She put them on the oven grill and as usual forgot about them... way beyond 160° - this isn't a big deal, she is consistant with over cooking food to avoid pathogens.. And promptly served the planks of Pork for us to eat. She is a good cook - but her heart isn't in it lately. - that's OK - but I will not eat it. I had to hydrate some really good shrimp linguini tonight. So I grabbed an Oster steamer and tossed the pork chops on top on a whim... 20 minutes later - wow... it worked.
[IMG:http://4imgs.com/1035/sys/prod/4507_2_0_0.JPG]SO here is the new thought process One can cook Pork Chops correctly - toss on a dryer - 6 hours - then vac seal and then hydrate on the trail...with the chops cut to size above the boiling water with a plate and a cover.
