The trout looks delicious. I don't lug one, but I've often wished I had a skillet with me in the backcountry. I've cubed and steamed/parboiled trout in my little titanium pot (just a 1/2 inch of water to distribute the heat, till it boils away). They come out good enough, but fried with bacon would be so much better.
At home where I am more apt to have a campfire I've cooked fish in Aluminum foil on hot coals. That has worked out phenomenally when I get the cook time right.

I always wrap in tin foil on a hot flat rock, after I scrape away the coals. 10 minutes.... flip. Also when I know I eating fish, I bring a packet of 'Good Seasons' Eyetalian!
