So I wanted to make some buiscuts and white gravy, or chip beef on toast. I found a jar of homel dried beef but it's not the brand or product I use to buy...the hormel has a red label and the one I use to buy has a blue label and was not hormel brand but it's been so long since I made it I can't remember for the life of me what the brand was, can you.
It was a blue label on a small glass jar??? -

Every January we go to a Burns Supper - a dinner party throw by Scottish organizations world wide to commemorate the birthday of Robert Burns, Scotland poet laureate. The evening begins with a procession of bagpipes and color guard with claymores (giant Scottish swords) to escort in the haggis (oats and entrails cooked in a sheep's stomach). Then the master of ceremony in his formal kilt recites from memory with his heavy scottish brogue Burns' "Address to a Haggis". Then every one eats.

If I remember correctly, its the nitrites and nitrates in bacon that causes the problems.--

So a couple of girlfriends... uh yea I am totally married.... 33 years last Friday - Anywho. Asked me to make Cowboy or western chewy jerky. Clearly back then there were limited resources in the midwest or past Chicago. Hell no to Worcestershire and Soy liquid and other ingredients. So I attempted to buy both Brisket and Top Round, well she told me it had to be very chewy. My wife grabbed the Brisket and served dinner tonight... too late... so now its the top round. Just didn't grab the 2 pound aluminum mallet. Can't pound the meat. cut the round in two for 1 and 1/2 pounds in two batches for traditional and modern.
Here is Modern
1 beef Brisket
1 1/2 cups of English Worcester (appears to be the whole bottle)
3-4 teaspoons of Wrights Liquid Smoke - skip if natural smoking, like me
1 Tablespoon of seasoning salt
1/2 teaspoon of black pepper ( I don't use this, I have a fresh cracker and delver the goods.
1 Tablespoon of garlic minced.
1 Teaspoon of Crushed Red Pepper flake
Mix like hell toss in meat and put something on top to push the meat down.
Cover with saran.
The marinade is so awwwesome.
I like to marinade till the next day over ten hours.. sometimes I screw up and go two to three days,, no matter.
pull and dry 5 hours on a dryer or 2 hours in a smoker and transition to the dryer,
Here is OMG about 1800's This was a total fail.
1 cup curing salt - Morton Sweet 1 to 4 ratio or 1 cup to 4 parts water. Skip other exsplanations when doing saltpeter. 4 tablespoons of fresh crack black peppercorn and 1 tablespoon of crushed garlic. soak 10 hours. Most important rince when done. Once air drying completely, air out the meat for 60 minutes. Quick soak with Apple cider 2 tablespoons of Chipotle Tobasco. Fresh Crack Black Pepper & Sea Salt. Or run the seasoning of your choice, perhaps onion, garlic again and pepper which is most popular. The reviews amongs some twenty + friends and 2 pounds of jerky is the top part is awesome and easy to make... the bottom part needs more work and I will address this next week when I can rotate trays thru a dishwasher vs a power sprayer... the Maytag broke after two years.Be wise enough to walk away from the nonsense around you!

So I have been wickedly busy and a few hunter friends dropped off several Ring Neck Pheasants. After cleaning, I soaked for 12 hours in a salt brine and smoked in apple wood and a touch of hickory for 4 hours. Deanna vac sealed and they are wonderful Christmas special treats with the right dipping sauces.Be wise enough to walk away from the nonsense around you! -
