Start with 1-1.5 Top round shoulder marbled if you can get it. You will need the following ingredients and a large culinary mallet and cutting board.
Small mixing bowl
1/2 a bottle of the brand new Soy Vay Veri Veri Teriyaki
1 Tablespoon Frank's extra hot Sauce
1 Tablespoon Wrights Liquid Smoke
Fresh Crack black peppercorn.
Combine ingredients. Cut against the grain and make as thin as possible strips. Electic knife is a plus. Pound the meat into nice flat strips - cut the planks again if too big... pounding breaks the fiber into a softer chew. really toss the meat into the sauce to get the product an even coat. Let it soak covered overnight
Nesco at 140° 5 hours on a timer...
Want a gloss coat? put some additional Teriyaki in a Pyrex dish and brush on additional Teriyaki on both sides and run for one more hour... meat will be very pliable, and soft... Better than anything you ever bought at a store.
Big surprise? Sodium at 18% per tablespoon. As low as it can go... and maximum flavor...
