The curious thing is, corned beef is not Irish. When I was traveling in Ireland, no one I met had ever heard of corned beef nor did they understand why all Americans kept asking for it.
I use to cook a New England boiled dinner for St. Patrick's Day, but then I was the only one who would ever eat it. My wife always would complain about the stink of boiled cabbage. This year I took the lazy way out and picked up one from a local restaurant to-go, and enjoyed it by myself in a park.

We always have ham for Easter. Having grown up in the central Atlantic region (MD), I've always found ham from other areas to be disappointing (especially MI). Today's was not so bad. What was extra special was the Grasă de Cotnari I had been saving. It's a late harvest noble rot white wine from the Moldavia region of Romania. Had to have it special ordered as none of it wine shops carry it. It is not expensive.
