There isn't a lot of privacy Out There. If you're going to get all bent out of shape at seeing somebody's you-know-what or having somebody see yours, you probably aren't an experienced hiker, because it happens both ways to all of us. I'll agree not to wave it about if you'll agree not to get upset about surprising me, and I'll agree not to get all embarrassed at the occasional glimpse of someone who's em-bare-assed.
My worst experience in the wink-and-snigger department came one day when the wind rose and the weather turned raw. I was near to a shelter, and ducked into it to put on my baselayer. Of course a dozen kids, aged about 12-14, from a Christian boys' camp walked in on me just as I was peeled down. I never saw so much sniggering, elbowing in the ribs, embarrassed shuffling of feet, and so on. "Hey! I ain't got nothin' you ain't seen before! Just wanted to get out of the wind to change!" didn't help. I think they were half expecting to be struck by lightning or something.
