    I see a need for this type of work/service. I’ve been looking at lightweight campers and Leisure Vans and they are so, so expensive. My issue is that I want something light enough to pull behind a Subaru (or small enough to easily drive on mountain roads) yet it needs to be more than just a bed.     This hasn’t been my best summer for cycling but I’m getting back to it. I rode 23 mi on Sunday, the longest ride this summer. Most of my rides have been 12-14 mi...the heat has been difficult this year.

    I’m beginning to make plans to finish the FHT. October seems like a good month but average temps for September look really nice too. Weird...I figured September in SC would still be hot but average temps are cooler than K’Ville.

    My Paella making class was cancelled so I’m now signed up for a French patisserie class. Tonight I made some pastry crust for several quiches that will be assembled tomorrow. Crossed fingers.

    Decided to try my hand at biscotti making last week. They turned out decent. They were perfectly crisp but the candied orange that I used melted and caramelized, making them taste slightly burned on the edges. I still think they’re good, especially dipped in coffee. But lesson learned.

    Oh yeah...also recently made chocolate yeast bread. It was an attempt to mimic the chocolate bread sold at Wilbur chocolate in PA. I used whole pieces of Wilbur buds. As the bread baked, it pushed some of the chocolate pieces out. My bread looks like it’s pooping, Lol! Another learning experience...except I’m not sure how to apply what I learned.

    Somewhat venturing into dessert making, The problem is that I want to make it but don’t need to eat it! Recently made peach muffins with fresh peaches and a sponge cake with almonds, orange ricotta filling, and fresh blueberries. The sponge cake was an adventure. I thought about that cake all night...even looked up recipes when I couldn’t sleep. So was excited to try it the next morning only to screw it up. Sponge cake uses 4 ingredients and the eggs are used as the leavening. You beat the eggs …
